We were honored to be hosted at Nostrana restaurant in Portland for an event of handmade pasta!
We were welcomed by chef Cathy Whims in the kitchen of her restaurant and spent there a full day with her and all her staff, teaching to all of them the art of handmade pasta rolled out with the rolling pin. Nostrana kitchen became for a day a handcraft pasta laboratory where everybody was involved and participated in the preparation of the dinner for 180 people who were reserved that night. We prepared 5 different traditional pastas of our region: tortellini in broth, tortelloni with ricotta, ravioli with pumpkin, garganelli and lasagne alla bolognese that were included in the dinner menu.
After cooking all the morning and afternoon, we had the opportunity to taste the fruits of our labors and we had dinner at Nostrana with Cathy Whims and the Bologna-Portland sisters cities community. It was an evening of great fun, food, wine but overall of big satisfaction! Everybody appreciated so much the authentic flavors of the food and the traditions beyond each recipe that we tried to bring and to share with the people we met.
After the class with us, due to the success of the event, Cathy has decided she wants to feature hand rolled pasta once a week as a special for her customers!
