Day Visit to Parmigiano Reggiano Factory
and Traditional Balsamic Vinegar of Modena Producer
If you are in Bologna, a visit to a Parmigiano Reggiano factory and to a producer of traditional balsamic vinegar of Modena is a MUST DO!
We organize a day excursion and personally guide you to the area of Modena to see from the source where these two wonderful products are made and to learn what makes them so special.What does it make Parmigiano Reggiano so special?
We still wonder whether that’s because of the ingredients, the way wheels are seasoned, the special climate of Emilia or simply the efforts and love that producers give it. Share with us the authentic taste of the king of the cheeses and learn the way how Parmigiano is produced.
This is the day program:
In the early morning (around 7,15am), we will pick you up from your hotel in Bologna and drive you to visit a Parmigiano Reggiano cheese factory, family owned and run. During the visit we will see all stages of the Parmigiano making. From boiling milk to the aging in big aging rooms. So, discover with us the ability of casaro and the indispensable importance of men knowledge over machines and technology. You will learn every secret hidden behind Parmigiano Reggiano, how it is made, aged and approved by the consortium. Definitely, you will be able to recognize the real Parmigiano Reggiano from real imitations. Taste to try!
After the visit we will proceed to a producer of traditional balsamic vinegar of Modena. The owner, a producer of the Consortium, will host us and will guide us through his acetaia to show his precious wooden barrels containing aceto balsamico tradizionale. Some of them have some products that dates from more than a hundred years! You will breath that history that holds tight a family to his land and precious barrels.
Then, a tasting of the product at various ages, up to 25 year old balsamico learning its special uses.
At the acetaia the owner will offer us a buffet light lunch based on tigella and gnocco fritto --a special bread of Modena area-- served with different varieties of salumi such as ciccioli, coppa, salame, prosciutto, beside Parmigiano, and accompained by Lambrusco, the red sparkling wine typical of Modena area that matches wonderfully with our lunch.
After lunch we will drive back to Bologna and take you back to your accommodation (around 2pm). Half a day has never been so satisfying.
